Oxford Encyclopedia of Food and Drink in America
Friday, October 15, 2004 at 10:48PM I was invited by my old chef instructor Cathy Kauman to prepare a menu item for a reception celebrating the release of the Oxford Encyclopedia of Food and Drink in America. She was an associate editor for this publication.

I prepared a Pork escabeche with Peruvian Papas a la Huancaina (Potatoes in the Huancayo style). I used fingerling potatoes and roasted them. Then I prepared the Huancaina sauce which is a mix of farmers cheese, saltines, garlic, aji amarillo (a yellow peruvian pepper) and evaporated milk and some of my own secret little additions. I garnished it with pickled red onions.
